I've never made cupcakes before, so that might have something to do with it , but I had pretty disastrous results yesterday making the vanilla cupcakes from JOVB. I followed the directions exactly, as far as I can tell, but the cupcakes "fell" midway through baking and had a weird, heavy texture when I took them out of the oven. Plus, they seemed kind of gummy inside, as if they hadn't cooked all the way through, though I left them in longer than the recipe says, and I was making "mini" cupcakes, so they're pretty small. Any thoughts on what could have caused this? I don't own an electric mixer, so I do everything by hand (might have something to do with it, I guess), or maybe my oven temp. is off? I'd appreciate comments on this, as I really want to start bringing yummy vegan goodies to work.

Sorry I do not know the answer, but this has happened to me several times making the vanilla cupcakes from JOVB.  They tasted good, but were extremely dense and a little rubbery.  

As far as stuff to bring to work, I have made cupcakes from the banana bread with chocolate chips and added walnuts and they were a big hit.  Although I wanted to snatch them out of people's hands when they said, "These don't taste vegan!"  It was beyond their comprehension that vegan food would taste good, although I eat with these people EVERY day!

I have only ever made chocolate cake before and this is the recipe I used.  It was so good- really light and fluffy but lovely dark cocoa flavour. YUM.

Dry ingredients

                                       

3 cups flour
                                                2 cups sugar
                                                2 tsp baking soda
                                                1 tsp salt
                                                6 Tbsp cocoa powder

                                       

Wet ingredients

                                       

2 Tbsp vinegar
                                                3/4 cup oil
                                                2 tsp vanilla extract
                                                2 cups water

                                       
  1. Preheat oven to 350°F.                                                
  2. Mix dry ingredients.                                                
  3. Mix wet ingredients in another vessel.                                                
  4. Add wet to dry and mix well.                                                
  5. Pour into cake tin and bake 30 minutes or until toothpick inserted in the centre comes out clean.

When making cupcakes, it's important to only mix the batter until the ingredients are combined, otherwise the result will be heavy and dense. Might that be the problem?

Also, your oven's temperature may not be accurate, which is fairly common no matter the age of the oven. An oven thermometre isn't very expensive and will allow you to adjust the temperature so that you get good results when baking!
